English Farmhouse Cheddar
Using traditional Cheddar methods, The Fine Cheese company's Cheddars are made in conjunction with a West Country farmer to their own recipe.
The cheese is matured for around 14 months. After grading to ensure their quality and consistency, they are formed and dipped in burgundy wax. It is sweet and tangy, with a particulaly creamy texture, and the occasional crystal resulting from long maturity.
