A kind of little sister to White Lake Cheese's renowned classic, Rachel. Washed in Somerset Cider Brandy, the semi-hard texture and mellow taste perhaps most closely references French monastery tommes. Springy and supple on the palate, a wealth of subtle earthy and vegetal notes emerge throughout the arc of flavour. With scarcely any 'goatiness' to speak of, the finish is quite nutty and biscuity. Younger cheeses will have an edgier lactic tang, with more aged versions gathering more compact sweetness. A lovely cheese for the warmer months.
