Mozzarella Di Bufala

When a cheese is eaten as fresh and simply as Mozzarella, it has to be perfect; we think it's this one - La Barona.  Made by the cutillo family, from 100% buffalo milk, to provide a silky, soft texture and a delicate creaminess.  Animal husbandry is everything to the family.  To keep them happy and healthy in the hot summer climate, the buffaloes 'swim' several times a day in large water tanks.  How cool is that?
